Wheat Bhatura or Bhature 
Bhaturas are sort of bread goes well with Chole or chola but if you wish, you can serve with other curries as well.
 
 
   

Prep Time:5-8min

Cooking Time: 12-15min

Servings: 4 

Ingredients:

2 cups whole wheat durum flour (use regular whole wheat if you can't find this)
1 tsp vegetable oil
1/2 tsp salt
1 potato, boiled and mashed
1/2 cup soy yogurt

Water if needed only 

No fry(baked without any oil) Bhature

 

Direction:
Place all the ingredients in a bowl. Using water, if necessary, knead into a smooth dough. Set aside for about 15 minutes at least. I recommend to keep dough hard for best result so I usually avoid water but if you need then take couple of tbsp water to knead dough. Potato release water so dough may get very soft if you add more water.
Divide the dough into 1-inch balls and roll into circles, about 5-6 inches in diameter.
Heat oil in a frying pan. It should be at least an inch deep.
When the temperature reaches 375 degrees, place one of the bhaturas into the oil, taking care to put it down away from you. Be very careful because you're dealing with boiling oil here!
Push down the bhatura with the ladle until bubbles start to appear in the surface. This should take just a few seconds. When the bhatura puffs up, turn it over and fry the other side for a few more seconds until golden brown. It is not necessary that all your bhaturas will puff up. Roll not too thin and fry them at enough hot oil and chances are higher that your bhaturas will puff up.
Serve immediately with the chana for best satisfying result.
