| Lauki/Bottlegourd/Doodhi Kofta |

| Prep time: 10 minutes Cook time: 15 minutes Serves: 6 Ingredients: Lauki/Bottlegourd/Doodhi – 4 cups (peeled & shredded) Chickpea Flour/Besan – 3/4 cup (Mix of all purpose flour and corn flour can be added as well to make kofta soft insie crispy outside Onion – 1/4, med.(optioal) Ginger and garlic 1/2 tsp each Roasted Peanuts or almond – 1/4 cup Cilantro/Coriander Leaves – 10 sprigs (finely chopped) Curry powder 1tbsp. Red Chili Powder(if needed more spicy) – to taste 1/4 tsp baking powder(Optional) Salt – to taste | Direction: Squeeze out excess water out of the shredded Lauki/Doodhi. Add in the Chickpea flour as needed (enough to form balls for the koftas). Also add in ginger, garlic Peanuts, Onions, Cilantro, curry powder, red chili powder and salt. Heat 11/2 cups of oil in deep shallow fry pan Form balls/koftas and drop them in the oil. Fry till golden brown. When done take out from oil and drain access oil into towel paper. Serve Kofta hot or add into curry. |

Same way by following above recipe, you can make carrot, cabbage or mix vegetable koftas

Koftas fried after dipping into batter | Prep time: 10 minutes Cook time: 10minutes Serves:4-6 Ingredients: Koft Mix: 1 cup boiled mash potatoes 1 cup mash paneer 2 tablespoon minced cilantro (hara dhania) 1/2 tea spn garam masala 1/2 teaspoon cumin seed(jeera) 1/4 teaspoon salt 1 small finally chopped green chili or 1/2 tea spn chilli powder 1 tbl spn cashews 1 tbl spn raisins Batter For dipping koftas: 2 tablespoon all purpose flour (maida, plain flour) 4 tablespoon water Also needed: Oil to fry | Direction: Mix all the ingredients together for kofta, With oiled hands, divide the mixture into 14 to 16 equal parts. Make them in round balls. Mix flour with about 4 tablespoons of water and mix well until batter is smooth. Heat the oil in a frying pan on medium high heat. The frying pan should have at least 1 1/2 inch of oil. To check if the oil is ready, just put one small piece of mix in the oil, it should come up right away but not change color. Dip the paneer balls in the batter one at a time and slowly drop into the frying pan. Turn them occasionally. Fry koftas until golden-brown all around. |

If you want to make Malai kofta without dipping into batter than add following ingredients into kofta mix
2 tbl spn corn starch
2 slice bread (optional)Dip the bread in water and squeeze off all the water.
Make balls and fry directly.
Koftas: Fried directly without dipping into batter
How about baking Malai Kofta in the oven!!!
Add 1/4 tsp of baking powder to the above kofta and spray the koftas with cooking spray. Bake them in the oven @ 350 F till they are brown.
