NanKhatai(Eggless Cookie)
I make this nankhatai three ways. First recipe, I use wheat flour(genhu atta-chapati atta), good for kids. Second recipe, I use plain flour(maida-all purpose flour). Third recipes, I combine wheat and plain flours. Either way, you make this recipe, result is great. 
 
 
  

Prep Time: 7-8 Mins

Baking Time: 15mins 

Ingredients:

1 cup Wheat flour(Chapati flour)-Plain flour(Maida-all purpose flour) can be used.

1/4 cup Whole wheat flour

1 Tbsp. Rava(Samolina or sooji)

1/2 cup Unsalted butter(Room Tempreture)

1 Tbsp Gram flour(Besan)

1 Tbsp Crushed almond or your choice of nut

1/2 cup sugar

1/2 tsp Cardamon powder

A pinch of Nutmeg powder

1 tsp Baking powder 

 
Direction:

In the mixing bowl, beat sugar and rooom temprature butter well. 

In another bowl mix all dry ingredients.

Now Add dry mixture to the beaten sugar and butter mixture.

Mix everything well and foam like dough.

Preheat oven at 350F degrees

Make small golf size balls and place on cookie baking tray

When done place the baking tray into the preheated oven.

Let it bake about 12-15mins at 350 degrees.

After 10-12 mins, bring oven tempreture to the lowest 170F.

Bake another about 10-12mins so that naan khatai cooks well inside out

After 10-12mins, turn off the oven but do not take out the tray yet. Keep another 20-25 mins inside oven.

Take out tray after 20mins or so and let it cool about 10mins.

Naan Khatai is ready to eat.

I tried another recipe with all purpose flour and came out good, have a look at it

Ingredients:

1/2 cup all purpose flour

1/2 cup Wheat flour(Chapati flour)

1 Tbsp. Rava(Samolina or sooji)

1/2 cup Unsalted butter(Room temprature)

(Room Tempreture)

1 Tbsp Gram flour(Besan)

1/4th cup Crushed almond  or your choice of nut

1/2 cup sugar

1/2 tsp Cardamon powder

A pinch of Nutmeg powder

1 tsp Baking powder
