A cool, creamy side is a must with spicy Indian food. Raitas are healthy to eat. Whole-milk yogurt soothes the palate and stands up to the spicier dishes. The best thing is Raitas are super easy to make in no time. Best for party, picnic and get togathers. Most comonly used vegetables for raitas are cucumber, onion, carrot, cabbage, potato.  Also some common fresh herbs that are used in Raitas are cilantro, mint, dill. But there are many other vegetables and herbs.

Cucumber Raita

 

Ingredients:

1 cucumber, peeled and grated, squeeze 

out all water from grated cucumber

1-1/2 C. plain yogurt

1/4 C. fresh coriander leaves, chopped

1/4 tsp garlic paste 

1/2 tsp roasted cumin seeds

1/2 tsp salt

1/4 tsp Sugar(Optional) 

1/4 tsp cumin powder

1/4 tsp green chili finely chopped

Direction:

Beat yogurt lightly

 in a bowl until smooth. 

Combine all other

ingredients with beaten

yogurt.  

 

Red Onion Raita

 

Ingredients:

1 small red onion, peeled and grated or

chopped very fine

1-1/2 C. plain yogurt

1/4 C. fresh coriander leaves,

chopped(optional)

1/2 tsp roasted cumin seeds

1/2 tsp salt

1/4 tsp Sugar(Optional) 

1/4 tsp cumin powder

1/4 tsp Red chili powder or according to

taste

Direction:

Beat yogurt lightly

 in a bowl until smooth. 

Combine all other

ingredients with beaten

yogurt.
