Sev Usal is maharashtria dish but very popular in all west part of India.  This chaat is very easy to make, healthy as well.  To me, this is the most mouthwatering chaat ever!  Basically, it is gravy made of dry peas, topped with sev/ghathia, exotic chutneys, onion and cilantro.
 
Prep Time: 10 min

Soaking Time: 5-6 hr or overnight

Cooking Time: 8-10min(if using pressure cooker

 

Ingredients:

2 cups Dry peas(lentil)

1 small onion chpped very fine

1 tomato chpped very fine(optional)

1/2 cup of fine besan sev

Tamrind chutney

Green Chutney

Yogurt(optional)

Ginger, garlic paste

Curry patta

Pavbhaji masala

a pinch of Turmeric powder

1 tsp Red chili powder

salt to taste

Fresh cilantro to garnish

 

For seasoning

1 tbsp oil

1 tsp cuming seeds

A pinch of Asafoetida

Directions:

Soak Dry peas 5-6 hours or overnight to cook fast.

Boil peas with salt and water in pressure cooker.

While peas is boiling cut vegetables and prepare chutneys.

Heat the pan with tbsp of oil.

When oil heated add cumin seeds, afafoetida and curry patta.

Add Tomato and cook till tender.

Add ginger, garlic paste and other spices.

Add boiled peas along with water now and cook for another 5min. Add some more water if needed only. We need kind of battery consistancy just like ragda. Serve hot. 

Now when you want to serve(Following process can not be done in advance, you have to prepare right before serving). Ragda can be prepared in head of time.

Take an individual plate or bowl(preferable).

Take some peas mix (ragda),  and sprinkle some onion.

Pour chutneys and yogurt

Sprinkle sev and garnish with cilantro.

Serve immediately after preparing.
