Sukhdi(Golpapdi)

Sukhdi is a great way to get energy during winter time.  I love this sukhdi most when it's fresh and sometimes right from the stove. I give little bit of twist by adding date pieces. I also sometimes add fried poha in my Golpapdi and everytime I make it taste so delicious. Kids also simply love this sweet. 

 

Prep Time: 5min

Cooking Time: 15 min

 

Ingredients:

31/2 cups whole wheat flour
2 cups ghee
1 cup jaggery - sliced thinly

1- 11/2 cup finely chopped dates

If not adding dates, sesame seeds or fried thick poha can be added as well. That also gives nice taste to this sweet dish. But date is healthy to eat so we came up with adding dates to it.

Direction:

Take a pan, add ghee to it and add the wheat flour. saute the flour on medium heat while constantly stirring. As the flour tends to cook and change color, it will soak up all the ghee.  Do this till fat separates from the sides (you can see a little ghee separated on the edges of the pan) and the color of the flour changes from white to light pinkish brown and finally to a light golden brown.Finally add the jaggery, stir it in and lower the flame to lowest. Add dates just before taking the pot off from the stove.

If you don't want to add dates then you will have to adjust sweetness with jaggery. Taste and adjust to add more jaggery if you wish.

Pour the batter into the greased dish and pat ligtly with your hand. Use a flat-bottomed cup (katori) to spread the mixture evenly in the dish. Let it cool for 3-5 mins. Now cut into small squares or diamonds with a knife and keep in the same dish until it is entirely cool. Only then remove the pieces and store in an air-tight container.

 
You can store this at room temperature for 15-20 days easily. Use as a sweet snack any time of the day!!
