Prep. Time: 10min
Cooking time: 5min in Pressure Cooker.  Take about 15-20 min in open pot
 
Ingredients:
11/2 cup Basmati Rice or any rice you like
Mix vegetables such as eggplant, potato, cauliflower, grean beans, peagon peas or green peas, spinach. You can add/omit as many vegetables you like to this recipe. And also you can choose your quantity for vegetables. Whatever you have available in your pentry when you making this recipe
Ginger, garlic, green chilli paste 1 tbsp each
Cumin powder about 1 teasp. (Garam Masala can be added)
1/2 teasp. Turmeric powder
Salt about 11/2 teasp or according to your test
Raw cashchews, peanut and raisins all together about 3/4 cup
3 or more cups water
To Garnish: Cilantro and coconut
For seasoning: Oil, Mustard, Cumin Seeds, Asafoetida

Direction:
Heat about 3tbsp. oil in a pressure cooker. When oil is ready add poppy or mustard seeds. wait till they popped up completely. Add cumin seeds and asafoetida.  Add all vegetables. Add ginger, garlic, green chili. Add all powdered spices. Add salt. Wait till vegetables are little tender. Add rice and enought water to cook the Khichari. Put the lead on and close pressure cooker.  Hear about 3-4 whistles and turn off the stove.  Let all the air come out of Pressure cooker automatically.  When no more air inside, open the cooker. Garnish khichari with Cilanto and coocnut. Serve hot with butter milk, gujarti Kadhi, pickle, salad, papad or serve itself.
